Discovering one of the most beloved dishes of our cuisine: noodles with dried porcini mushrooms, let's prepare them together!
Quickly rinse the porcini under running water.
In a frying pan keeping the heat low, put a knob of butter, wait for it to melt then add a generous drizzle of oil (40 g.), drop in the porcini and whole garlic. We adjust the salt and pepper and cook for 12 minutes. Once the mushrooms are cooked, we turn off the heat.
Meanwhile, let's lower the noodles, once cooked, drain them and pour them into the pan with our porcini mushrooms. We also add half a ladle of pasta cooking water (which we will have kept aside), it will serve to facilitate the mantecatura and get a nice creamy texture.
We stir-fry well, then add plenty of parsley.
