A simple and tasty recipe for preparing pan-fried artichokes, a typical Italian side dish perfect for accompanying main courses of meat, fish or eggs.
In a large skillet, heat the oil with the garlic clove (whole or minced, according to taste). Drain the artichokes well and add them to the pan, stirring to flavor.
Pour in half a cup of water or hot broth, cover with a lid, and cook over medium-low heat for about 15-20 minutes, until tender.
If necessary, add a little water while cooking.
When cooked, season with salt and pepper, remove garlic, and sprinkle with fresh chopped parsley.
Variant
You can add a little dry white wine at the beginning of cooking to add fragrance. For a richer touch, add toasted breadcrumbs or grated Parmesan cheese before serving.
